My friends Jessica and Emily are my monthly recipe contributors. They came together yesterday during the snow storm and decided to put a little nature in their recipe:
A heartfelt thank you to Emily's sister Stacey who inspired today's treat. Today just might be the last ditch effort of winter to bury us in a perfect powdery snow. So with our winter coats and a bowl in hand we went out to procure 1 of the 4 ingredients required-snow- which may not be offered up until next winter. Now for the rest...
Last Chance Vegan Snow Ice Cream
8 cups snow
1.5-2 cups soy or almond vanilla milk
2 tsp vanilla extract
4 Tbl Maple Syrup
Mix together using a whisk, a spoon, or a pastry cutter works rather well as I found out until the consistency of ice cream. It is also quite tasty with a dusting of cinnamon, nutmeg, or pumpkin pie spice on top. Enjoy right away before it melts. I believe it would taste best in front of a fire but a space heater will do. Goodbye winter!
