Green Well Salad






I was honored to be given the opportunity to receive an advanced copy of Shauna Niequist's new book "Bread and Wine."  It is a cook book and love story about the life that is generated when food is served around the table.  I am going to be reviewing this book over the course of the next few weeks.  I have tested out several recipes and photographed them as a way to promote her book.  The depth of beauty in her words and passion for people just ignites my passion to photograph her recipes with as much flair and zest as I can give.

When we made the Green Well Salad at our house, it was for a dinner party with another couple, Jenny and Sean, who are also foodies in St. Louis.  Jenny is a chocolatier and her husband Sean, works in a food truck.  That evening we sat around talking about bands, art, food, and life in St. Louis.  We shared papaya salad, the green well salad and curry chicken.  And life was lived well that evening.

Ingredients
1 pound of mixed greens
2 onions thinly sliced
1 table spoon of butter
2 sliced pears
2 cups of graped (halved if you wish)
1 cup of dried cherries
1 cup of walnuts chopped
1 ounce container of goat cheese (crumbled)

I can't even tell you how excited I am to read this book. This salad looks amazing. Beautiful pictures, too.

Thanks Mary!!! The book is soooo good. Sometimes I feel like a Golden Retriever when I read her stuff. She just writes the way I feel!! I love her!

I have been eating this salad ever since I read the preview copy of Shauna Niequist's book.

She adds caramelized onions.

Also, she serves it with an olive oil and balsamic vinaigrette. 2 parts olive oil, 1 part balsamic, and a dollop of Dijon mustard, a little salt and pepper, and sometimes a spoonful of maple syrup.
